The wonder of Chickpea Gluten-Free Pasta:
Traditional pasta is typically made from wheat flour, making it unsuitable for those with gluten sensitivities or celiac disease. However, the rise in popularity of alternative flours has given us a wide range of gluten-free pasta options. One such option is chickpea pasta, which is not only gluten-free but also packed with protein and fiber. Ingredients
  

  • 8 ounce box chickpea pasta cooked according to box directions. See note below recipe.
  • 1 can artichoke hearts, drained and quartered
  • ½ cup black olives, sliced
  • ½ red onion, thinly sliced
  • 1 can chickpeas, rinsed and drained
  • ½ cup cherry tomatoes, cut in half
  • 2 tsp Italian seasoning
  • Pepper to taste
  • Balsamic Dressing (recipe below)

Instructions
 

  • Drain and rinse the canned chickpeas and artichokes.
  • In a large bowl, combine the drained chickpeas, artichokes, cherry tomatoes, and chopped red onion.
  • Add the cooked chickpea spiral pasta to the bowl and toss ingredients together.
  • Drizzle your desired amount of balsamic dressing over the pasta salad and toss again to coat all the ingredients.

Notes

I use veggie broth and minced garlic instead of water for boiling/ cooking the pasta for more flavor. You can also use half veggie broth and half water.
 
This dish is great with sauteed spinach and chopped colorful bell pepper.
