CREAMY BROCCOLI AND PEA SOUP
Ingredients
- 4 cups broccoli florets
- 2 cups fresh or frozen peas
- 1 onion diced
- 3 cloves garlic minced
- 4 cups vegetable broth
- 1 cup unsweetened almond milk or any plant-based milk
- juice of 1 lemon
- salt and pepper to taste
Instructions
- In a large pot, sauté the onion and garlic until softened.
- Add broccoli and vegetable broth; bring to a boil. Simmer for about 10 minutes until the broccoli is tender.
