
Kale and White Bean Detox Soup

- Potato Masher
Ingredients
- 2 carrots diced
- 2 cans White Beans or Black Eyed Peas drain & rinse
- 1 Bunch Kale chopped
- 2 celery stalks chopped
- 1 onion diced
- 3 cloves garlic minced
- 1 tsp dried rosemary
- 4 cups vegetable broth
- juice of 1 lemon
- salt and pepper to taste
Instructions
- In a large pot, combine all ingredients except lemon juice.
- Bring to a boil, and then simmer for 20 minutes until vegetables are tender.
- Mash some of the beans to thicken the soup.
- Stir in lemon juice before serving.
