- 2 carrots diced
- 2 cans White Beans or Black Eyed Peas drain & rinse
- 1 Bunch Kale chopped
- 2 celery stalks chopped
- 1 onion diced
- 3 cloves garlic minced
- 1 tsp dried rosemary
- 4 cups vegetable broth
- juice of 1 lemon
- salt and pepper to taste
In a large pot, combine all ingredients except lemon juice.
Bring to a boil, and then simmer for 20 minutes until vegetables are tender.
Mash some of the beans to thicken the soup.
Stir in lemon juice before serving.
Notes:
Texture Variation: Blend a portion of the soup for a creamier consistency.
Flavor Enhancement: Add a bay leaf while cooking for depth of flavor.
Meal Prep: This soup tastes even better the next day.

1. Use pre-chopped kale or frozen kale to reduce prep time.
2. Opt for pre-diced carrots, celery, and onions from the grocery store. (I like to use
frozen seasoning blend in all my soups)
3. Easily substitute white beans with black eyed peas and add 1 cup of cabbage for
your "New Year's" Good Luck Soup.
4. If you like a tomato base type soup-simply add a can of diced tomatoes & 1 small can
of tomato sauce.
