Spicy Roasted Edamame

These Spicy Roasted Edamame are a crunchy and satisfying snack that’s both nutritious and delicious. Packed with protein and fiber, this whole food plant-based, oil-free snack is perfect for munching on at home or on the go. The combination of spices adds a flavorful kick!

Ingredients
  

  • 2 cups shelled edamame fresh or frozen, thawed
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon cayenne pepper adjust to taste
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon lemon juice optional for added flavor

Instructions
 

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • In a bowl, combine the shelled edamame, garlic powder, smoked paprika, cayenne pepper, salt, and black pepper. If using, drizzle with lemon juice and toss to coat evenly.
  • Spread the seasoned edamame in a single layer on the prepared baking sheet.
  • Bake in the preheated oven for 20-25 minutes, stirring halfway through, until the edamame are crispy and lightly browned.
  • Allow the roasted edamame to cool slightly before serving. Enjoy them warm or at room temperature.

Tips & Tricks-
Adjust Spice Level- Feel free to adjust the amount of cayenne pepper to your preferred spice level. You can also add other spices like chili powder or cumin for different flavor profiles.

This recipe can easily be doubled or tripled for a larger batch. Store leftovers in an airtight container at room temperature for up to 3 days.
