These Spicy Roasted Edamame are a crunchy and satisfying snack that’s both nutritious and delicious. Packed with protein and fiber, this whole food plant-based, oil-free snack is perfect for munching on at home or on the go. The combination of spices adds a flavorful kick!

Ingredients
  

  • 2 cups shelled edamame fresh or frozen, thawed
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon cayenne pepper adjust to taste
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon lemon juice optional for added flavor

Instructions
 

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • In a bowl, combine the shelled edamame, garlic powder, smoked paprika, cayenne pepper, salt, and black pepper. If using, drizzle with lemon juice and toss to coat evenly.
  • Spread the seasoned edamame in a single layer on the prepared baking sheet.
  • Bake in the preheated oven for 20-25 minutes, stirring halfway through, until the edamame are crispy and lightly browned.
  • Allow the roasted edamame to cool slightly before serving. Enjoy them warm or at room temperature.
