- ¼ cup pure maple syrup or date syrup
- 1 tsp vanilla extract
- ¼ cup unsweetened almond butter or peanut butter
- ⅓ cup chopped pecans or walnuts
- ¼ cup chopped almonds or pumpkin seeds
- ¼ cup unsweetened shredded coconut optional for texture
- ¼ cup mini dark chocolate chips or cacao nibs optional but amazing!

- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine dry ingredients — oats, flour, baking powder, pumpkin pie spice, and salt.
- In a separate bowl, whisk together wet ingredients — pumpkin purée, maple syrup, vanilla, and nut butter until smooth.
- Pour wet into dry and stir until evenly combined. Fold in the nuts, seeds, coconut, and chocolate chips if using.
- Scoop the dough into 12 large cookies, pressing slightly to flatten (they won’t spread much).
- Bake for 18–20 minutes until lightly golden and firm around the edges.
- Cool completely before storing.
- Storage: Keep in an airtight container for 5 days on the counter or up to 2 weeks in the fridge. These freeze beautifully for up to 3 months.
