Packed with black beans, juicy tomatoes, crisp corn, creamy avocado, and a sprinkle of fresh cilantro—all wrapped in warm, gluten-free tortillas. They’re oil-free, easy to prep, and full of flavor. Ingredients
  

  • 1 can 15 oz black beans, drained and rinsed
  • ½ cup cooked quinoa or couscous
  • 1 cup corn kernels fresh or frozen
  • 1 cup cherry or grape tomatoes halved
  • 1 red bell pepper chopped
  • ½ cup red or white onion diced
  • 1 avocado diced
  • 2 cups chopped romaine or butter lettuce
  • 2 tbsp fresh cilantro chopped
  • Juice of 1 lime
  • 1 tsp cumin
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 8 small corn or gluten-free tortillas

Instructions
 

  • In a large bowl, combine beans, quinoa or couscous, corn, tomatoes, bell pepper, onion, and avocado.
  • Add lime juice, cumin, garlic powder, salt, pepper, and cilantro. Toss to mix.
  • Warm tortillas and layer with chopped lettuce, then top with the fiesta filling.
  • Serve immediately or set up a taco bar for a make-your-own taco night!

Ingredients:
• 1 ripe avocado
• Juice of 1 lime
