Sweet & Spicy Jackfruit Sliders

These Sweet & Spicy Jackfruit Sliders are a delicious and easy plant-based alternative to pulled pork. The jackfruit is simmered in a smoky, sweet, and spicy sauce, making it perfect for piling onto gluten-free slider buns or lettuce wraps.

Ingredients
  

  • 1 can 14 oz young green jackfruit in water or brine, drained and shredded
  • ½ cup diced red onion
  • 2 cloves garlic minced
  • ½ cup crushed tomatoes
  • 2 tbsp maple syrup
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 1 tbsp coconut aminos or gluten-free tamari
  • 1 tsp smoked paprika
  • ½ tsp chili powder
  • ½ tsp cumin
  • ½ tsp crushed red pepper flakes adjust for spice level
  • ½ tsp black pepper
  • ¼ tsp salt optional
  • ½ cup vegetable broth or water
  • 1 tbsp lime juice

Instructions
 

  • Prepare the Jackfruit: Drain and rinse the jackfruit. Use your hands or a fork to shred it into bite-sized pieces.
  • Sauté: In a pan over medium heat, sauté the red onion for 3-4 minutes until soft. Add the garlic and cook for another minute.
  • Simmer the Sauce: Stir in the crushed tomatoes, maple syrup, Dijon mustard, apple cider vinegar, coconut aminos, smoked paprika, chili powder, cumin, red pepper flakes, black pepper, and salt. Cook for 2 minutes.
  • Add the Jackfruit: Stir the shredded jackfruit into the sauce. Add the vegetable broth and simmer for 10-15 minutes, stirring occasionally, until the jackfruit absorbs the flavors and softens.
  • Finish with Lime: Stir in the lime juice and cook for another 2 minutes.
  • Assemble the Sliders: Pile the jackfruit mixture onto gluten-free slider buns or lettuce wraps. Top with coleslaw and sliced jalapeños if desired.
