Healthy Southern-Style Hush Puppies

These baked hush puppies are a healthier twist on the Southern classic, made with whole food ingredients and no oil. Perfect for a quick snack, appetizer, or side dish.

Ingredients
  

  • 1 cup cornmeal
  • 1/2 cup gluten free flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 cup unsweetened almond milk or any plant-based milk
  • 1 tablespoon apple cider vinegar
  • 1 cup finely chopped green onions or a mix of bell peppers and onions for added flavor

Instructions
 

  • Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Mix Dry Ingredients: In a mixing bowl, combine the cornmeal, gluten free flour, baking powder, salt, black pepper, garlic powder, and onion powder. Mix well.
  • Combine Wet Ingredients: In a separate bowl, mix the almond milk and apple cider vinegar. Let it sit for a few minutes to create a buttermilk-like consistency.
  • Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the chopped green onions.
  • Shape the Hush Puppies: Using a spoon or your hands, form small balls or patties and place them on the prepared baking sheet.
  • Bake: Bake in the preheated oven for 20 minutes, or until the hush puppies are golden brown and cooked through. You can flip them halfway through for even browning.
  • Serve: Allow to cool slightly before serving.

Add Spice: For a kick, add some chopped jalapeños or cayenne pepper to the batter.
Make Ahead: The batter can be made ahead of time and stored in the refrigerator for up to 2 days before
baking.
