This Zucchini Noodle Detox Soup is light yet satisfying, featuring spiralized zucchini as noodles in a flavorful broth filled with seasonal vegetables—a great way to enjoy your greens.

Ingredients
  

  • 2 medium zucchini spiralized
  • 1 cup cherry tomatoes halved
  • 1 bell pepper diced
  • 1 onion diced
  • 3 cloves garlic minced
  • 4 cups vegetable broth
  • 1 tsp dried basil
  • salt and pepper to taste

Instructions
 

  • In a large pot, sauté onion and garlic until translucent.
  • Add cherry tomatoes, bell pepper, basil, salt, and pepper; cook for about 5 minutes.
