This Zucchini Noodle Detox Soup is light yet satisfying, featuring spiralized zucchini as noodles in a flavorful broth filled with seasonal vegetables—a great way to enjoy your greens.

- 2 medium zucchini spiralized
- 1 cup cherry tomatoes halved
- 1 bell pepper diced
- 1 onion diced
- 3 cloves garlic minced
- 4 cups vegetable broth
- 1 tsp dried basil
- salt and pepper to taste
In a large pot, sauté onion and garlic until translucent.
Add cherry tomatoes, bell pepper, basil, salt, and pepper; cook for about 5 minutes.
Pour in vegetable broth; bring to a boil.
Add spiralized zucchini noodles; cook for an additional 3–5 minutes until just tender.
