  • 1 cup Gluten Free Flour Blend
  • ¼ cup rolled oats
  • ¼ cup unsweetened shredded coconut
  • ¼ cup maple syrup
  • 2 tablespoons almond milk
  • ¼ teaspoon salt
  • For the Pecan Topping:
  • 1 cup pecans chopped
  • ½ cup maple syrup
  • ¼ cup almond milk
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt

Instructions
 

  • Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper.
  • Make the Crust: In a mixing bowl, combine the gluten free flour, rolled oats, shredded coconut, maple syrup, almond milk, and salt. Mix until a dough forms. Press the dough evenly into the prepared baking pan.
  • Make the Pecan Topping: In a separate bowl, combine the chopped pecans, maple syrup, almond milk, cornstarch, vanilla extract, and salt. Mix well until the cornstarch is dissolved.
  • Assemble: Pour the pecan topping over the crust and spread it evenly.
  • Bake: Bake in the preheated oven for 30 minutes, or until the topping is bubbly and the crust is lightly golden.
  • Cool and Cut: Remove the bars from the oven and let them cool completely before cutting into squares.
  • Serve: Serve the bars at room temperature or chilled. Store any leftovers in the refrigerator for up to 5 days. Recipe makes approx. 9 bars when cut into equal squares-each approx. 2.5 inches.
