Spicy Roasted Edamame
These Spicy Roasted Edamame are a crunchy and satisfying snack that’s both nutritious and delicious. Packed with protein and fiber, this whole food plant-based, oil-free snack is perfect for munching on at home or on the go. The combination of spices adds a flavorful kick!
Ingredients
- 2 cups shelled edamame fresh or frozen, thawed
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- ½ teaspoon cayenne pepper adjust to taste
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon lemon juice optional for added flavor
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a bowl, combine the shelled edamame, garlic powder, smoked paprika, cayenne pepper, salt, and black pepper. If using, drizzle with lemon juice and toss to coat evenly.
- Spread the seasoned edamame in a single layer on the prepared baking sheet.
- Bake in the preheated oven for 20-25 minutes, stirring halfway through, until the edamame are crispy and lightly browned.
- Allow the roasted edamame to cool slightly before serving. Enjoy them warm or at room temperature.
