Ingredients
  

  • 1 cup cooked lentils red or green, well-drained
  • ½ cup almond flour or any nut flour
  • ½ cup rolled oats
  • ¼ cup maple syrup adjust to taste
  • ¼ cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup dairy-free chocolate chips optional

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine the cooked lentils, almond flour, rolled oats, maple syrup, cocoa powder, vanilla extract, baking powder, and salt. Mix until well combined. If using, fold in the dairy-free chocolate chips.
  • Using a spoon or cookie scoop, drop spoonfuls of the mixture onto the prepared baking sheet, flattening them slightly to form cookie shapes.
  • Bake in the preheated oven for 10-12 minutes, or until the edges are set. The cookies may look soft but will firm up as they cool.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
