Easy 3 Bean Party Salad
This is an easy and delicious salad or dip you can make in under 10 minutes. Great for meal prepping for take along lunches for the week. Take this dish to parties as an appetizer with baked tortilla chips!
Ingredients
- 15.5 oz Garbanzo beans
- 15.5 oz Black beans
- 15.5 oz Dark red kidney beans
- ½ cup Red bell pepper small diced
- ½ c cucumbers diced small
- 12 cup Red onions small diced
- ½ cup Fresh basil diced small
- ¼ cup Freshly squeezed lemon juice
- 1 tsp Your favorite seasoning. I like Cajun.
- A pinch of cayenne
Instructions
- Rinse and drain the garbanzo beans, black beans, and dark red kidney beans.
- In a large mixing bowl, combine the beans, red bell pepper, hot house cucumbers, red onions, and fresh basil.
- In a separate small bowl, whisk together the freshly squeezed lemon juice and your favorite seasoning.
- Pour the lemon juice mixture over the salad ingredients and toss well to combine.
- Let the salad marinate in the refrigerator for at least 30 minutes to allow the flavors to meld together.
- Serve chilled and enjoy!
Notes
By eliminating oil and using freshly squeezed lemon juice as a dressing, you eliminate the added oil and enhance the flavor with the tangy citrus taste. This modification makes the salad healthier and more WFPB-friendly while still being delicious.
This salad is great in a lettuce wrap, tortilla wrap or with baked white corn tortillas!
