Lentil Minestrone Soup
Lentil Minestrone Soup is an easy one pot meal in your Instapot (your personal chef). This array of veggies, lentils, beans and pasta will be a hit with the entire family!

Ingredients
- 1 onion diced
- 3 cloves garlic minced
- 2 carrots diced
- 2 celery stalks diced
- 1 zucchini diced
- 1 cup green beans chopped
- 2 cans tomato sauce no salt added
- 6 cups vegetable broth low- sodium
- 1 cup cooked kidney beans
- ½ cup dried lentils
- 2 cups fresh spinach
- 2 teaspoons dried Italian herbs
- 1 cup whole grain or chickpea pasta
- Salt and pepper to taste
Instructions
- Place the onion, garlic, carrots, celery, zucchini, green beans, tomato sauce, vegetable broth, kidney beans, lentils, spinach, dried Italian herbs, salt, and pepper into the Instant Pot.
- Close the Instant Pot lid and set it to the "soup" mode, which typically runs for 30 minutes.
- While the soup is cooking, prepare 1 cup of whole grain or chickpea pasta on the stovetop according to the package instructions.
- Once the soup is done cooking in the Instant Pot, allow for a natural pressure release or perform a quick pressure release, following the manufacturer's instructions.
- Open the Instant Pot and stir in the cooked pasta.
- Serve the soup hot, garnished with fresh basil leaves.
