Lentil Minestrone Soup
Lentil Minestrone Soup is an easy one pot meal in your Instapot (your personal chef). This array of veggies, lentils, beans and pasta will be a hit with the entire family!

- 1 onion diced
- 3 cloves garlic minced
- 2 carrots diced
- 2 celery stalks diced
- 1 zucchini diced
- 1 cup green beans chopped
- 2 cans tomato sauce no salt added
- 6 cups vegetable broth low- sodium
- 1 cup cooked kidney beans
- ½ cup dried lentils
- 2 cups fresh spinach
- 2 teaspoons dried Italian herbs
- 1 cup whole grain or chickpea pasta
- Salt and pepper to taste
Place the onion, garlic, carrots, celery, zucchini, green beans, tomato sauce, vegetable broth, kidney beans, lentils, spinach, dried Italian herbs, salt, and pepper into the Instant Pot.
Close the Instant Pot lid and set it to the "soup" mode, which typically runs for 30 minutes.
While the soup is cooking, prepare 1 cup of whole grain or chickpea pasta on the stovetop according to the package instructions.
Once the soup is done cooking in the Instant Pot, allow for a natural pressure release or perform a quick pressure release, following the manufacturer's instructions.
Open the Instant Pot and stir in the cooked pasta.
Serve the soup hot, garnished with fresh basil leaves.
