Lentil Minestrone Soup

Lentil Minestrone Soup is an easy one pot meal in your Instapot (your personal chef). This array of veggies, lentils, beans and pasta will be a hit with the entire family!

Ingredients
  

  • 1 onion diced
  • 3 cloves garlic minced
  • 2 carrots diced
  • 2 celery stalks diced
  • 1 zucchini diced
  • 1 cup green beans chopped
  • 2 cans tomato sauce no salt added
  • 6 cups vegetable broth low- sodium
  • 1 cup cooked kidney beans
  • ½ cup dried lentils
  • 2 cups fresh spinach
  • 2 teaspoons dried Italian herbs
  • 1 cup whole grain or chickpea pasta
  • Salt and pepper to taste

Instructions
 

  • Place the onion, garlic, carrots, celery, zucchini, green beans, tomato sauce, vegetable broth, kidney beans, lentils, spinach, dried Italian herbs, salt, and pepper into the Instant Pot.
  • Close the Instant Pot lid and set it to the "soup" mode, which typically runs for 30 minutes.
  • While the soup is cooking, prepare 1 cup of whole grain or chickpea pasta on the stovetop according to the package instructions.
  • Once the soup is done cooking in the Instant Pot, allow for a natural pressure release or perform a quick pressure release, following the manufacturer's instructions.
  • Open the Instant Pot and stir in the cooked pasta.
  • Serve the soup hot, garnished with fresh basil leaves.
