Ingredients
  

  • 4 cups carrots chopped
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 1 tsp ground cumin
  • ½ tsp ground coriander
  • 4 cups vegetable broth
  • salt to taste

Instructions
 

  • In a large pot, sauté onion and garlic until translucent.
  • Add carrots, ginger, cumin, coriander, and vegetable broth; bring to a boil.
  • Reduce heat and simmer for about 20 minutes until carrots are tender.
  • Blend the soup until smooth; season with salt before serving.
