- 1 onion diced
- 3 cloves garlic minced
- 1 tbsp fresh ginger grated
- 1 tsp ground cumin
- ½ tsp ground coriander
- 4 cups vegetable broth
- salt to taste
In a large pot, sauté onion and garlic until translucent.
Add carrots, ginger, cumin, coriander, and vegetable broth; bring to a boil.
Reduce heat and simmer for about 20 minutes until carrots are tender.
Blend the soup until smooth; season with salt before serving.
