This Healthy Southern-Style Peach Cobbler is a delightful twist on the classic dessert, made with whole food ingredients and no added oils. It's naturally sweetened and bursting with fresh peach flavor.

Ingredients
  

  • For the Peach Filling:
  • 3 cups Peaches pitted and sliced (about 4-5 medium peaches)
  • 2 tablespoons maple syrup
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • For the Cobbler Topping:
  • 1 cup Gluten Free flour blend
  • ¼ cup rolled oats
  • 2 tablespoons ground flaxseed
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ¼ cup unsweetened applesauce
  • ¼ cup Almond milk or oat milk
  • 2 tablespoons maple syrup

Instructions
 

  • Preheat the Oven: Preheat your oven to 375°F (190°C).
  • Prepare the Peach Filling: In a mixing bowl, combine the sliced peaches, maple syrup, lemon juice, vanilla extract, cinnamon, and nutmeg. Toss gently to coat the peaches evenly. Transfer the mixture to an 8x8 inch baking dish.
  • Make the Cobbler Topping: In another bowl, mix together the whole wheat pastry flour, rolled oats, ground flaxseed, baking powder, and salt. Add the applesauce, plant-based milk, and maple syrup. Stir until just combined to form a thick batter.
  • Assemble the Cobbler: Drop spoonful of the cobbler topping over the peach mixture, spreading it out slightly but leaving some gaps for the peaches to peek through.
  • Bake: Place the baking dish in the preheated oven and bake for 40 minutes, or until the topping is golden brown and the peach filling is bubbling.
  • Serve: Allow the cobbler to cool for 10-15 minutes before serving. Enjoy warm, optionally topped with a scoop of plant-based vanilla ice cream or a dollop of coconut whipped cream.
