Breakfast Burrito Bowl
This Whole Food Plant Based Breakfast Burrito Bowl is a hearty and flavorful way to start your day. It features a base of seasoned tofu scramble, black beans, roasted potatoes, avocado, and salsa for a satisfying plant-based meal. Customize it with your favorite toppings and enjoy it at home or on the go.
Ingredients
Tofu Scramble:
- 1 block 14 oz firm tofu, crumbled
- 1 tablespoon nutritional yeast
- 1 teaspoon ground cumin
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- salt and pepper to taste
Burrito Bowl:
- 1 cup cooked black beans
- 2 cups diced roasted potatoes or hash browns
- 1 avocado diced
- ½ cup salsa
- fresh cilantro chopped (for garnish)
- hot sauce optional
Instructions
- In a skillet over medium heat, crumble the tofu and add the nutritional yeast, cumin, garlic powder, onion powder, salt, and pepper. Sauté for 5-7 minutes, stirring occasionally, until heated through and lightly browned.
- Remove the tofu scramble from the skillet and set aside. In the same skillet, heat the cooked black beans until warmed through.
- Divide the black beans, tofu scramble, roasted potatoes, avocado, and salsa between two bowls.
- Garnish with fresh cilantro and serve with hot sauce if desired.
