
Banana Nut Bread
This moist and naturally sweet banana nut bread is made with whole food ingredients, no refined sugar, and no oil. It’s wholesome enough for breakfast yet satisfying enough for dessert. Perfectly spiced, loaded with ripe bananas, and studded with crunchy walnuts, this loaf is a healthy twist on a classic comfort bake.

- 3 large ripe bananas mashed + 1 banana for slices on top
- 1 cup unsweetened applesauce
- ½ cup pure maple syrup or date paste
- 2 tsp pure vanilla extract
- 2 cups oat flour or gluten-free flour blend
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp cinnamon
- ½ tsp nutmeg
- Pinch of sea salt optional
- 1 cup walnuts chopped

- Preheat oven to 350°F (175°C). Line a loaf pan with parchment paper.
- In a large mixing bowl, mash the bananas until smooth. Add applesauce, maple syrup, and vanilla. Stir well.
- In a separate bowl, whisk together oat flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Combine wet and dry ingredients. Fold in the walnuts. Batter will be thick.
- Pour batter into the prepared loaf pan. Smooth the top with a spatula.
- Slice the remaining banana and arrange on top of the loaf for a decorative finish.
- Bake for 45–50 minutes, or until a toothpick comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack. Slice and enjoy!
