  3. Add a light drizzle of lemon juice or aquafaba (no oil needed!) for shine.
  4. Surround the bowl with:
    • Cucumber rounds

    • Baked oil-free pita chips
    • Gluten-free seed crackers

Ingredients:

1½ cups cooked chickpeas (or 1 can, drained and rinsed)

    • 3 tablespoons tahini
    • 2 tablespoons lemon juice
    • 1 garlic clove
    • 1 teaspoon ground turmeric
    • ½ teaspoon cumin
    • Sea salt, to taste
  • 3–5 tablespoons ice water

Instructions:

  1. Add chickpeas, tahini, lemon juice, garlic, turmeric, cumin, and salt to a food processor.
  2. Blend until smooth.
  3. Drizzle in ice water a tablespoon at a time until creamy and whipped.

Toppings:

Pine nuts, pomegranate seeds, extra chickpeas, chia seeds

 

2. Green Goddess Hummus

A creamy blend of classic hummus with avocado, parsley, and lemon. Topped with pink peppercorn and black sesame seeds.

Ingredients:

    • 1½ cups cooked chickpeas

    • 3 tablespoons tahini
    • 2 tablespoons lemon juice

    3. Use a High-Speed Blender or Food Processor

    For the creamiest hummus, use a high-speed blender. Start with the lemon juice and tahini to create an emulsified base before adding chickpeas.

    4. Roast Beets Ahead or Buy Pre-Cooked

    Buy vacuum-packed cooked beets from the produce section to skip roasting. If roasting your own, do it up to 3 days ahead.

    5. Make in Batches and Store

    You can prep all 3 hummus flavors up to 4 days in advance. Store each in airtight glass containers and garnish right before serving.
