These Vegan Hummingbird Cake Energy Bites are a delightful twist on the classic Southern hummingbird cake, known for its combination of bananas, pineapple, and pecans. These energy bites are whole food plant- based, oil-free, and packed with flavor, making them a perfect healthy snack or dessert. They’re easy to make and great for on-the-go energy!

Ingredients
  

  • 1 cup rolled oats
  • ½ cup medjool dates pitted (about 6-8 dates)
  • ½ cup ripe banana mashed (about 1 medium banana)
  • ¼ cup crushed pineapple drained
  • ¼ cup chopped pecans
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon vanilla extract
  • pinch of salt

Instructions
 

  • Prepare the Ingredients: In a food processor, combine the rolled oats, pitted medjool dates, mashed banana, crushed pineapple, chopped pecans, cinnamon, nutmeg, vanilla extract, and a pinch of salt.
  • Blend the Mixture: Pulse the mixture until it is well combined and starts to stick together. You may need to stop and scrape down the sides of the processor to ensure everything is mixed evenly. The mixture should be sticky but still have some texture.
  • Form the Bites: Using your hands, scoop out about 1 tablespoon of the mixture and roll it into a ball.
  • Repeat until all the mixture is used, placing the energy bites on a plate or a baking sheet lined with parchment paper.
  • Chill: Place the energy bites in the refrigerator for at least 30 minutes to firm up.
  • Serve: Enjoy the energy bites chilled or at room temperature. Store any leftovers in an airtight container in the refrigerator for up to a week.
