Ingredients
  

  • 8 oz chickpea pasta
  • 1 red bell pepper diced
  • 1 zucchini sliced
  • 1 cup cherry tomatoes halved
  • 1 tbsp Cajun seasoning store-bought or homemade
  • 2 cloves garlic minced
  • salt and pepper to taste
  • fresh parsley chopped (for garnish)

Instructions
 

  • 1.Preheat the oven to 400°F (200°C).
  • On a baking sheet, toss the diced bell pepper, zucchini, and cherry tomatoes with Cajun seasoning,
  • minced garlic, salt, and pepper. Roast for 25 minutes or until tender.
  • Meanwhile, cook the chickpea pasta according to package instructions. Drain and set aside.
  • Once the vegetables are roasted, combine them with the cooked pasta in a mixing bowl. Toss to
  • combine and adjust seasoning if needed.
  • Serve warm, garnished with fresh parsley.
