Ingredients
  

Tofu Scramble:

  • 1 block 14 oz firm tofu, crumbled
  • 1 tablespoon nutritional yeast
  • 1 teaspoon ground cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • salt and pepper to taste

Burrito Bowl:

  • 1 cup cooked black beans
  • 2 cups diced roasted potatoes or hash browns
  • 1 avocado diced
  • ½ cup salsa
  • fresh cilantro chopped (for garnish)
  • hot sauce optional

Instructions
 

  • In a skillet over medium heat, crumble the tofu and add the nutritional yeast, cumin, garlic powder, onion powder, salt, and pepper. Sauté for 5-7 minutes, stirring occasionally, until heated through and lightly browned.
  • Remove the tofu scramble from the skillet and set aside. In the same skillet, heat the cooked black beans until warmed through.
  • Divide the black beans, tofu scramble, roasted potatoes, avocado, and salsa between two bowls.
  • Garnish with fresh cilantro and serve with hot sauce if desired.
