Savory Tofu and Vegetable Breakfast Scramble
Start your day with this Savory Tofu and Vegetable Breakfast Scramble, a protein-packed and flavorful dish that’s perfect for a hearty breakfast. This scramble features crumbled tofu sautéed with colorful vegetables and seasoned with spices, making it a satisfying and nutritious way to fuel your morning.
Ingredients
- 1 block 14 oz firm tofu, drained and crumbled
- 1 cup bell peppers diced (any color)
- 1 small onion diced
- 1 cup spinach chopped
- 2 cloves garlic minced
- 1 tsp turmeric powder
- ½ tsp cumin
- salt and pepper to taste
- 1 tbsp nutritional yeast optional, for a cheesy flavor
- fresh herbs like parsley or cilantro for garnish
- 2 tbsp veggie broth
Instructions
- In a skillet over medium heat, sauté the onion and garlic until translucent (with veggie broth instead of oil). Add the diced bell peppers and cook for an additional 3-4 minutes until they soften.
- Stir in the crumbled tofu, turmeric, cumin, salt, and pepper. Cook for about 5-7 minutes, stirring occasionally, until heated through.
- Add the chopped spinach and cook until wilted, about 2-3 minutes.
- If using, sprinkle nutritional yeast over the scramble and mix well.
- Serve warm, garnished with fresh herbs.
