Avocado Lime Cheesecake
These Avocado Lime Cheesecake Bars are a refreshing and creamy vegan dessert that combines the bright flavors of lime with the rich creaminess of avocado. Ingredients
Crust
- 1 cup raw cashews
- 1 cup rolled oats
- 1/4 cup maple syrup
- 2 tablespoons flaxseed meal + 6 tablespoons water
- 1/4 teaspoon sea salt
Filling
- 2 ripe avocados pitted and flesh scooped out
- 1 cup raw cashews soaked for at least 4 hours or overnight
- ½ cup full-fat coconut milk
- ½ cup maple syrup
- ⅓ cup fresh lime juice about 3-4 limes
- 1 teaspoon lime zest
- ¼ teaspoon sea salt
Instructions
- Prepare the Flaxseed Gel: In a small bowl, combine 2 tablespoons of flaxseed meal with 6 tablespoons of water. Stir well and let it sit for about 10-15 minutes until it forms a gel-like consistency.
- Make the Crust: In a food processor, blend the cashews and rolled oats until they form a fine meal. Add the maple syrup, prepared flaxseed gel, and sea salt. Process until the mixture starts to stick together. Press the crust mixture into an 8x8 inch baking pan lined with parchment paper. Refrigerate while preparing the filling.
- Make the Filling: Drain and rinse the soaked cashews. In a high-speed blender, combine the soaked cashews, avocado flesh, coconut milk, maple syrup, lime juice, lime zest, and sea salt. Blend until completely smooth and creamy, scraping down the sides as needed.
- Assemble: Pour the filling over the prepared crust and smooth the top with a spatula. Refrigerate for at least 4 hours or until set.
- Serve: Remove the bars from the pan using the parchment paper. Cut into squares and serve chilled. Garnish with extra lime zest or fresh berries if desired.
