Instructions
- Soak the wooden skewers in water for at least 30 minutes to prevent them from burning on the grill.
- Prepare the vegetables by washing them thoroughly. Cut the zucchini and yellow squash into thick slices. Cut the onion into wedges. Clean the mushrooms and remove the stems. Cut mini peppers in squares, cherry tomatoes whole.
- Preheat the grill to medium-high heat.
- Thread the vegetables onto the skewers, alternating between the different vegetables. You can create a pattern or mix them randomly, as per your preference.
- Instead of drizzling the skewers with olive oil, you can use a marinade or seasoning to add flavor. Here's a simple oil-free marinade recipe:– In a small bowl, mix together 2 tablespoons of low-sodium soy sauce or tamari, 1 tablespoon of balsamic vinegar, 1 tablespoon of maple, 1 teaspoon of Dijon mustard, and 1 clove of minced garlic.– Brush the marinade onto the skewers, making sure to coat all the vegetables.
- Place the skewers on the preheated grill and cook for about 8-10 minutes, turning occasionally, until the vegetables are tender and lightly charred.
- Once the skewers are cooked, remove them from the grill and let them cool for a few minutes before serving.
Notes
